Client Recipe: Joyce Jordan’s Cabbage Soup

Ingredients:
1 head cabbage (chopped)
32 oz carton of Beef broth
1 can diced tomatoes (do not drain)
1 can original Rotel (do not drain)
1 can Campbell’s cheese soup
1-1.5 lbs of lean hamburger
Directions:
Peel outer layer & wash cabbage, cut off bottom core
Cut cabbage into quarters, removing any more core
Cut cabbage into one-inch pieces & set aside
Brown meat in pan & drain grease
Place meat into cooking pot with beef broth
Empty diced tomatoes & Rotel into pot (with juice)
Add Cheese soup; rinse can with water & add to pot
Stir contents & mix well over medium heat until cheese melts
Add cabbage & stir until mixed well, cover with water
Bring to steady simmer, keep lid off
Do not boil, simmer for 1.5 hours uncovered
Check every 15 mins & add water to cover cabbage
Salt & pepper to taste when cabbage is cooked and enjoy!
