Client Recipes: Cindy’s Fruit Dip & Jalapeño Corn Muffins

Want a fun way to work some fruit into your holiday gatherings? Affinity Wealth Partners Client Cindy Ray offers a delicious dip recipe that's a real crowd pleaser.

Fruit Dip

  • 8 oz cream cheese, softened

  • 9 oz whipped topping

  • 2 cups marshmallow cream

  • 1⁄2 tsp vanilla

Combine the softened cream cheese and whipped topping in a bowl and mix well. Add the marshmallow cream and vanilla and mix well. Chill for at least 1 hour. Serve with fresh fruit.


She also shared her tasty recipe for Jalapeño Corn Muffins, which pair perfectly with a big pot of chili this time of year.

Jalapeño Corn Muffins

  • 1 1/4 c cornmeal

  • 1/2 c all-purpose flour

  • 1 tbsp sugar

  • 2 tsps baking powder

  • 1 1/2 tsps salt

  • 1 egg

  • 3/4 c milk

  • 1/4 c vegetable oil

  • 3 or 4 jalapeños, seeded & chopped

  • 1 onion, chopped

  • 1 15 oz can cream-style corn

  • 1 c shredded sharp cheddar cheese

Preheat oven to 425 degrees.

Combine the cornmeal, flour, sugar, baking powder and salt in a bowl and mix well.

Add the egg, milk, oil, peppers, onion, corn and cheese and mix well.

Fill lightly greased muffin cups two-thirds full. Bake for 25 minutes. Remove to a wire rack to cool.
